VEGETABLE DAHL

 

INGREDIENTS

 

1 Carrot diced
2 Tomatoes chopped
1 large Potato chopped into squares
2 Red chillies chopped
1 Onion chopped
1 cm Ginger chopped finely
1 cup Yellow split mung beans (urid dhal) Ie. Lentils.
2 cloves Garlic chopped
1 Egg plant (Round medium) chopped
1/2 tsp Turmeric powder
1 tsp Cumin powder
2 tbsp Ghee (or butter)
2 cups Water
Salt to taste

METHOD

 

 

Soak the dhal for at least one hour

 

 

Place dhal, ginger, garlic, salt, turmeric and water into a pot. Boil the  dhal until soft then set aside

 

 

Put ghee into a wok and heat on medium flame. Add chilli, cumin and fry. Add onions and cook until golden.

 

 

Add all the other ingredients except the dhal and eggplant. Cook for several minutes.

 

 

Add the eggplant and heat until just cooked through.

 

 

Lastly add the dhal and mix in well.

 

 

Serve on boiled rice with your choice of meat dish or on flat bread (naan, roti etc.)
