SEAFOOD RECIPES

 

Seafood of all types is eaten through out Malaysia. There are types of seafood that would not usually be on the menu in western countries but my recipes are more 'main stream.'

This website contains only a few of my recipes. If you would like the whole collection please purchase my cook book. There are 35 seafood recipes in the book. The book is available only in PDF format but it can be printed if you want a hard copy.

Unless otherwise noted, all the recipes here are for 3 servings. Some will require the addition of rice and a vegetable dish to make a complete meal.

 

THE RECIPES

 

Butter prawns

Butter Prawns : Butter Prawns are a firm favourite in Malaysia. They are cooked in their shells which helps to keep all the moisture in.

They are deliciously crisp and the curry leaves in the recipe give a wonderful exotic aroma.

There are many different versions of this dish and many use coconut. My version is very simple and coconut isn't used.

Baked Fish

Baked Fish : In the west, many people like to fillet fish to remove all the bones but in Malaysia part of the joy of eating fish to Malaysians, is sitting around, chatting and picking all the meat off the bones.

This recipe is spicy but not really hot and vinegar gives it an amazing tangy flavour.

You can use almost any kind of fish for this recipe but I love to use perch or bream.

Squid and Scallop Sambal

Squid and Scallop Sambal : This dish will take a while to prepare but once you taste the results you will find the effort has been worth while.

Rice flour adds a crispy coating to the fried tofu and if you want more bite simply add more chillies.

Curry Laksa

Curry Laksa : A soupy seafood and noodle dish that is just right for a hearty lunch or light dinner.

A delicious seafood dish with a hint of mint, rich tones of coconut and a squeeze of lime to gave it a tangy finish, this is one of my favourite dishes.

Tom Yum

Tom Yum : Another very popular soupy style dish, tom yum has strong flavours and in Malaysia is usually very spicy with a lot of chilli.

My dish caters more to the western palate but if you like chilli and want it to be more authentic,, then just add more chilli powder or fresh chilli to the dish.

Otak otak

Otak otak : An unusual dish using fish as the base. It is first processed into a paste with spices and coconut and then wrapped before being cooked by grilling.

It is a very different way to eat fish.

Prawn Soup

Prawn Soup : Packed with flavour, this soup uses rice vermicelli noodles and a combination of prawn, egg, lettuce and sambal to give a complex set of tastes.

It takes a little longer to prepare than some dishes but it is really worth the effort.

Prawn Sambal

Prawn Sambal : Sambal is the Asian equivalent of the western chutney. It is primarily a side dish to add flavour to a main dish.

It is strongly flavoured and a delicious accompaniment.
