CHILLI TROMBOCINI

 

 

INGREDIENTS

 

1/2 Trombocini chopped

1/4 Onion sliced

1/2 Shrimp stock cube

1 Red chilli chopped

2 large banana prawns cleaned and chopped

1 tsp Sugar

1/4 tsp Turmeric

3 tbsp Coconut cream

100 ml Water

2 tbsp Cooking oil.

Salt to taste

 

Trombocini - use choko if this is unavailable. Trombocini is actually a type of zucchini.

METHOD

 

 

Heat a fry pan on medium heat and add the cooking oil

 

 

Add the onion and fry until it starts to soften

 

 

Add stock cube and break it up in the pan

 

 

Add chilli

 

 

Add the prawn and stir fry briefly

 

 

Add salt

 

 

Add sugar

 

 

Add turmeric

 

 

Add the trombocini (or choko)

 

 

Add coconut cream and water

 

 

Stir everything so that it mixes well

 

 

Cover and cook for 3-4 minutes

 

 

Serve on boiled rice with your choice of meat dish
