SWEET POTATO BALLS

 

INGREDIENTS

 

600g Sweet potato (orange)

5 tbsp Rice flour

5 tbsp Corn flour

4 tbsp Caster sugar

1 tsp Vanilla sugar

2 tbsp Desiccated coconut (or 3 tbsp coconut powder)

Cooking oil for deep frying

METHOD

 

 

Steam sweet potato until a fork can pass through easily.

 

 

Remove skin.

 

 

Place in a bowl and mash.

 

 

Add sugars and coconut and mix well.

 

 

Add flours and mix well.

 

 

Heat oil in a wok

Use a teaspoon to drop small dollops of the sweet potato mixture into the hot oil.

 

 

Cook until golden brown.

Eat as snacks or make a sweet syrup or use coconut cream as a sauce.
