OYSTER CHICKEN

 

INGREDIENTS

 

1 large Chicken leg per person (chop into three pieces)
2 cloves Chopped garlic
3 cm Ginger. Grate finely and extract juice. (Press in garlic crusher to extract juice if you have a garlic crusher.)
1/2 tsp Corn flour
2 tbsp Oyster sauce
1 tbsp Shao xing wine
1 tbsp Soya sauce
2 tbsp Vegetable oil
1 cup Water
1 tsp Dark soya sauce
Pinch of MSG (optional)
Salt & sugar to taste

METHOD

 

 

First prepare the ginger juice. Add corn flour, shao xing wine, 1/4 cup of water, 1/2 teaspoon of sugar and soya sauce to the juice and mix well.

Chop raw chicken into pieces. Alternately you can de-bone the chicken or chop chicken fillets.

Heat wok (medium) and add oil. Add chopped garlic and fry until fragrant and brown.

Add chicken pieces.

Cook on medium heat until the chicken is half cooked.

Add sugar and salt.

Add oyster sauce.

Add dark soya sauce and fry for about 5 minutes.

Add the ginger juice mixture and simmer until chicken is fully cooked.

Add water if the sauce starts to dry out.

Add a pinch of MSG (optional).

Remove chicken from wok and clean the wok.
