WONTON NOODLES

INGREDIENTS
6 Wonton noodle rounds 2 Siew Pak Choy (cleaned) 12 Banana prawns shelled and cleaned 2 1/2 tsp Sugar 100g Pork meat diced 50g Pork fat chopped into small squares 1 tsp Oyster sauce 2 tbsp Caramel sauce 1 tsp Black vinegar 1 tsp Soya sauce 3 drops Sesame oil 3 cloves Garlic coarsely chopped 1 tsp Corn flour mixed with 1 cup water 2 tbsp Cooking oil 2 pinches MSG (optional) Salt to taste

METHOD
Place the cleaned prawns in a bowl and add 1 tsp sugar. Mix the sugar into the prawns.
Separate the pak choy stalks from the green leaves and leave in two different bowls.
Heat cooking oil in a fry pan and add the pork fat.
Fry until the squares of pork fat turn brown and crisp. Pour oil and fat squares into a metal bowl and set aside until needed.
Add the garlic and fry until fragrant
Add the pork meat and fry until it starts to brown
Add salt
Add the prawns
Add the pak choy stalks
Add the oyster sauce and stir briefly
Add the pak choy leaves
Add the soya sauce
Add the water / corn flour mixture and stir through
Add the caramel sauce
Add the remaining sugar (1 1/2 tsp)
Add the black vinegar
Add MSG (optional)
Add the pork fat and oil (Yes I know this is not good for you but without it you won't get the right taste.)
Add the sesame oil
In a saucepan boil some water (the pot should be about 3/4 full). Pour a few drops of cooking oil on the surface of the water.
Using a slotted spoon or a proper noodle soon (see photo) dip in 2 noodle bundles at a time.
When they are nice and soft remove and place on a plate. (As this dish serves 3 then that is 2 bundles of noodles per plate.)
Spoon the sauce over the top of the noodles and mix well using a couple of forks.
