MALAY STYLE TROMBOCINI

 

 

INGREDIENTS

 

500g Trombocini chopped

1 small Onion chopped

2 tbsp Dried shrimp (pounded)

2 Red chillies (fresh) sliced

6 tbsp Coconut powder

1/2 cup Water

1/3 tsp Turmeric

1 clove Garlic sliced

1/2 tsp Sugar

1/4 tsp MSG (optional)

2 tbsp Cooking oil

Salt to taste

METHOD

 

 

Soak the dried shrimp for a few minutes in water then discard the water. Pound the shrimp in a mortar and pestle until the shrimp is all broken up.

 

 

Remove the skin and chop the trombocini

 

 

Put cooking oil in a fry pan set temperature to high and add the garlic. Fry until fragrant.

 

 

Add the dried shrimp

 

 

Add onion

 

 

Add salt

 

 

Add trombocini and turn the temperature to medium high

 

 

Add the chillies

 

 

Add turmeric and stir through

 

 

Put the coconut milk in the water and stir well. Add to the pan

 

 

Turn temperature to medium then cover and cook for about 7 minutes

 

 

Add sugar

 

 

Add MSG (optional)

 

 

Serve on a bed of boiled rice with your choice of meat dish.
