LIN KO AND SWEET POTATO

INGREDIENTS 1/2 cup Tepung Goreng Pisang (banana fritter flour) 1 Egg beaten 1/2 cup Water 1 Sweet potato Cooking Oil to deep fry
Note: Yam is usually used instead of sweet potato but in Australia it is not easily available.

Cut the sweet potato into 1/2 inch slices
Cut the New Year cake into slices
Put the coking oil in a small deep wok on high heat
Make a 'sandwich' with the sweet potato and lin ko
Coat the sweet potato and lin ko in the batter
To test if the oil is hot enough dip in a wooden chop stick. If the end bubbles then it is ready and you can turn the heat down a bit.
Deep fry until the sweet potato starts to soften
Remove
from oil and drain on paper towels before eating. |
