STINKY NOODLES

(Serves 3 and takes about 30 minutes to make)

 

 


 

INGREDIENTS

 

6 Radishes. Radishes grated

3 Noodle bundles (Thin Chinese Pork Steak Noodles)

3 small Carrots grated

4 cloves Garlic finely chopped

3 Dried squid sliced thinly

3 Dried fish (Jambrong)

150g Pork mince

1 tbsp Vegetarian shitake sauce

125g Bean sprouts

3 drops Sesame oil

1 1/2 tsp Sugar

1/2 Onion chopped

1 tsp Light soya sauce

1 tbsp Dark soya sauce

1/2 tsp Hoisin sauce

2 pinches MSG (optional)

3 tbsp Cooking oil

2 tsp Corn flour in

1 1/2 cups Water

Salt to taste

METHOD

 

The dried fish (Jambrong) must first be fried in oil

 

 

then the fish is pounded to break it up. Set it aside until needed

 

 

Blanche the bean sprouts

 

 

Boil some water in a pot and cook the noodles until soft. Drain and place the noodles on plates and set aside until needed.

 

 

In each bowl add grated carrot, bean sprouts and grated radishes on top of the noodles

 

 

Heat 3 tbsp of cooking oil in a small wok

 

 

Add the squid and fry for about a minute

 

 

Add the garlic

 

 

Add the onion and fry until it starts to soften

 

 

Add salt

 

 

Add sugar

 

 

Add the pork mince and mix well

 

 

Add light soya sauce

 

 

Add dark soya sauce

 

 

Add shitake sauce

 

 

Add the corn flour / water mix and stir well

 

 

Add hoisin sauce

 

 

Add MSG (optional)

 

 

Add sesame oil

 

 

Cook until the pork mince is done and then spoon the mixture over the vegetables and noodles

 

 

The final item is to sprinkle the dried fish on top and then enjoy!
