MUSTARD / EGG PLANT

 

 

 

INGREDIENTS

 

1 large Egg plant (brinjal)

1/4 tsp Turmeric powder

1/4 tsp Aniseed powder

1 tsp Mustard seed

1 Onion sliced

5 tbsp Cooking oil

Salt to taste

2 pinches MSG (optional)

METHOD

 

 

 

First chop the egg plant into triangular shapes and put in water until needed

 

 

Heat a large fry pan on medium heat and add cooking oil. Heat for a few minutes then add the aniseed

 

 

Add the mustard seed. Wait until the seeds start to pop

 

 

Add the onion

 

 

Add the turmeric

 

 

Cook until the onions soften then add the egg plant

 

 

Add salt

 

 

Add MSG (optional)

 

 

Cook for about 10 minutes then serve on boiled rice with your choice of meat curry.
