BROCCOLI WITH PRAWN

Broccoli isn't one of the most popular dishes in the western world but if cooked correctly it is delicious. The main thing to remember, whether frying or blanching broccoli, is not to over cook it.

 

INGREDIENTS

 

1 head Broccoli (cut into small pieces)
2 tbsp Oil for cooking
2 cups Water
5 Prawns (medium) cut into very small pieces. Add a pinch of sugar to the chopped prawns.
2 Cloves garlic
1/2 Onion sliced
1/2 tsp Chicken stock
1 tsp Shao xing wine
1/2 tsp Corn flour mixed with water
Salt & sugar to taste

METHOD

 

 

Cut the broccoli into small pieces

 


Slice the onion and chop the garlic

 


Put 1.5 cups Water into a wok and heat until boiling. Add salt and sugar and a few drops of oil. Add the broccoli and blanch for 5 minutes.

 


Remove the broccoli and strain. Add the remaining oil and heat on medium setting.

 


Put in the garlic and fry until brown and fragrant.

 


Add a pinch of salt.

 


Add the chicken stock.

 


Add the onion.

 


Stir fry the onion and garlic for a couple of minutes.

 


Add the prawns. Cook for a minute or so until almost cooked.

 


Add the drained broccoli.

 


Stir fry briefly to mix the onion, garlic and prawn into the broccoli.

 


Add the Shao xing wine.

 


Add the corn flour and water mixture and stir fry again.
Serve on a bed of rice
