BRAISED CHILLI EGGPLANT

 

 

INGREDIENTS

 

1 large Egg plant

3 Red chillies

1 tsp Chicken stock powder

2 tbsp Kecap manis

1 tbsp Ginger minced

1 tbsp Garlic minced

1/2 tsp Baba's chilli powder

1 1/2 tsp Yellow bean paste

2 tsp Sugar

1 tbsp Vinegar

1/2 cup Water

3 tbsp Cooking oil

Salt to taste

METHOD

 

 

Partly peel the eggplant

 

 

Cut the eggplant into wedges and place them in water in a large bowl

 

 

Put cooking oil in a wok and heat

 

 

Add the chilli

 

 

Add the ginger and stir through

 

 

Add the garlic and stir through

 

 

Add the chicken stock

 

 

Add the yellow bean paste and stir

 

 

Add the eggplant

 

 

Cover and cook for about 5 minutes

 

 

Add sugar

 

 

Add kecap manis

 

 

Add vinegar

 

 

Add water

 

 

Add chilli

 

 

Cover and cook until the eggplant is soft

 

 

Serve on rice with your favourite meat dish
