ASPARAGUS & SQUID

 

 

INGREDIENTS

 

3 tsp Dried shrimp (pounded)

2 bunches Asparagus

2 cloves Garlic chopped

3 Red chillies de-seeded and chopped

3 small Squid tubes cut into rings

1/4 Shrimp stock cube

1 tsp Sugar

A shake of belacan

Salt to taste

1/3 cup Water

3 tbsp Cooking oil

 

Sometimes its hard to know whether to put a dish under vegetable or another category as it may contain meat. In this case it is the asparagus that is the focus.

METHOD

 

Pour a small amount of water over the dried prawn and allow to sit for about 3 minutes.

 

 

Drain the water away and pound the shrimp. Set aside until needed

 

 

Clean any hard woody parts from the asparagus

 

 

Chop into pieces

 

 

Put cooking oil into a wok on high heat

 

 

Add garlic and fry until fragrant

 

 

Add the dried prawn

 

 

Add the shrimp stock and break the cube up

 

 

Add chillies

 

 

Add a shake of salt

 

 

Add sugar and stir through

 

 

Add belacan

 

 

Add squid

 

 

Add water

 

 

Reduce heat to medium, cover and cook for 3-4 minutes or until the asparagus is cooked but not soft.

 

 

Serve on boiled rice
