PEARL BARLEY DESSERT

 

 

INGREDIENTS

 

5 tbsp Pearl barley

5 cups Water

200 ml Coconut cream

3/4 cup Sugar

1/2 tsp Pandan essence

1 tsp Corn flour

4 tbsp Coconut powder

METHOD

 

Put the pearl barley and water in a saucepan and bring to the boil.

 

 

Simmer until the the barley starts to split

 

 

Add the sugar

 

 

Add coconut cream

 

 

Add pandan essence

 

 

Add the corn flour mixed with a couple of table spoons of water

 

 

Add the coconut powder and stir well. Serve in a small bowl with some coconut cream drizzled on top.
