600g Fatty pork
1 pkt Dried bean curd
3 tbsp Soya sauce
1 stick Cinnamon
1.5 Star anise
3 tsp Sugar
5 loves Garlic un-peeled
2 tbsp Dark soya sauce
1 tsp Light soya sauce
1 tbsp Oyster sauce
4 cups Water
1 tsp Corn flour
1/3 cup Water (mix with corn flour)
2 cups Cooking oil
Pinch of MSG (optional)
Salt to taste
Method
Soak the bean curd in hot water until it softens
When the bean curd has softened cut it into pieces with scissors
Drain and set aside until needed
Cut the pork into pieces and place in a large bowl
Add 3 tbsp of soya sauce to the pork
Mix well
Break up the cinnamon stick and star anise but don't crush it too much
Bruise the unpeeled garlic
Heat a large pot on high and add 2 cups of cooking oil
When the oil is hot add the bean cur and fry until it starts to brown
Remove the bean curd and place in a bowl until needed
Add the pork meat and fry until it browns
Remove the pork and place in a bowl and drain off most of the oil leaving about 3 table spoons full in the pot
Add the cinnamon and star anise and fry for a couple of minutes
Reduce the heat to medium.
Add the bruised garlic and fry for a minute or so
Return the pork to the pot
Add salt
Add sugar
Return the bean curd to the pot
Add dark soya sauce
Add 1 tsp of light soya sauce
Add oyster sauce and mix well
Add water
Cover, reduce heat to low (very low) and cook for about 90 minutes. If the pork is not VERY SOFT then the dish is not ready.
Add corn flour and water
Cook until the sauce thickens
Serve with boiled rice and a vegetable dish
